Salmon steaks

Many of us have taken advantage of the recent sunny weather to clean down the barbeque and get cooking outdoors.

Barbequed Salmon Steaks
Serves 4
Four Salmon Steaks
Two large slicing tomatoes
Large handful of fresh basil
One tablespoon of chilli dipping sauce
One tablespoon of pressed rapeseed or olive oil

Method:
Blend the tomatoes, basil, chilli dipping sauce and oil in a food processor or blender and use this to coat the salmon steaks.
Wrap in tinfoil and cook on barbeque until the salmon is cooked through.
Serve with jacket potatoes, sour cream and chives and a delicious seasonal salad.
